Recipe: Tasty Linzer cookies

Linzer cookies. Linzer Cookies take two almond flavored cookies and sandwiches them together with a layer of jam. Linzer Cookies are named after a Linzer Torte, which was originated in Linz, Austria. The torte is a pastry traditionally filled with black currant preserves and topped with a lattice crust.

Black currant preserves are traditionally used in the Torte and raspberry preserves are most. Linzer cookies are one of my absolute favourite cookies to make around the festive season. You can cook Linzer cookies using 10 ingredients and 9 steps. Here is how you achieve it.

Ingredients of Linzer cookies

  1. You need 200 grams of butter.
  2. Prepare 380 grams of flour.
  3. Prepare 200 grams of powdered sugar.
  4. Prepare 1 tsp of vanilla extract.
  5. You need 80 grams of almonds flour.
  6. It's 1 of apricot jam or strawberry jam.
  7. You need 4 of egg yolks.
  8. Prepare 1/2 tsp of baking powder.
  9. You need 1 pinch of of salt.
  10. You need 1 of lemon... ONLY ZEST.

Linzer Cookies are a delightful treat. Buttery, flaky shortbread filled with jam & sprinkled with powdered sugar. Classic Linzer Cookies are favorite cousins of Linzer Torte. Linzer Cookies can be cut into daisies, hearts, rounds, and even teddy bears.

Linzer cookies instructions

  1. In a bowl of an electric mixer, mix the butter (room temperature) until creamy.
  2. Add the powdered sugar and mix. Than add in the same bowl, the egg yolks, vanilla extract, lemon or orange zest and mix for 2 minutes..
  3. Add the almonds flour, baking powder and a pinch of salt. Mix!.
  4. Finally add the flour all at once. Mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Wrap in plastic and pit it in the fridge for 20 minutes..
  5. Roll the dough 1/4 inch and cut 2 3/4 inch rounds with a plain or fluted cutter. With 1/2 of the rounds, cut a hole from the middle of each round with a heart or round small shape. I cut them with a star shape...
  6. Place all the cookies on an ungreased baking sheet and chill for 15 minutes..
  7. Bake the cookies until the edges begin to brown. Allow to cool to room temperature..
  8. Spread apricot or strawberry jam on the flat side of each solid cookie. Dust the top of cut-out cookies with powdered sugar and press the flat sides together with the raspberry jam in the middle and the powdered sugar on the top.
